Banana muffins

I love love love making banana muffins. No just because they’re so easy to make and use up all my ripe bananas but also because they’re so healthy! They are a great way to start the morning and especially for someone like me who hardly ever has a proper breakfast, these become on the go breakfast! They’re so good you can top them with nutella or peanut butter or serve as dessert with a scoop of ice cream! Let’s get straight to it!

Ingredients

1 cup wholewheat flour or atta

1/2 cup sugar

3 large ripe bananas

1/4 cup flavourless oil such as canola oil

1/2 teaspoon baking soda

1 teaspoon baking powder

a pinch of salt

1 teaspoon cinammon

1/2 teaspoon nutmeg

1 teaspoon vanilla extract

1/2 cup chopped walnuts – optional

1/2 cup mini chocolate chips – optional

Method

  1. Mash bananas with a fork in a bowl. Add oil, vanilla extract, sugar and whisk till pale and fluffy.
  2. Sift in all the dry ingredients in a separate bowl. If using nuts, add in to the Add dry ingredients to wet and gently combine with a spatula.
  3. Pour into your muffin tin and bake in a preheated oven at 180 degree celsius for 10-15 minutes or till a skewer inserted in the middle comes out clean.
  4.  You can frost these muffins with some nutella or peanut butter. Enjoy!
